Once considered to be the national symbol by the Welsh in the sixth century, this native Mediterranean vegetable has a distinct flavor that is still prized today. Resembling a giant scallion, the leek is related to the garlic and onion, however, its flavor and fragrance is milder and more subtle. May be cooked as a side dish by itself or mixed with other vegetables. Add to salads, soups, and stews.
